HACCP On Demand

AIB's HACCP Instructor, Dr. Cliff Pappas, adapted his popular seminar presentations for internet use. Listen to each lecture and take a short self-check quiz. After listening to all the lectures, take a comprehensive final exam and create a model HACCP plan. Topics covered include: History of HACCP, Overview of HACCP, Prerequisite Programs, Biological, Chemical and Physical Hazards, The Seven Principles of HACCP, HACCP Plan Development, Deviation Reports, Validation and HACCP Manual Development.

This course will provide a foundation of knowledge for people working as part of a HACCP team, review the history and background of HACCP, and provide an understanding of HACCP plan development. The course also guides you through the seven principles of HACCP, prerequisite programs, and the forms and reports used in a HACCP plan.

The course materials are presented in three ways:
1. as narrated presentations with slides and sound that run in real time (Flash Player)
2. as HTML with the slides next to a transcript of Dr. Pappas's lectures
3. as PDF files showing the slides that can be printed - additional content is also provided in this form.

We've tried to make HACCP On Demand as accessible and user-friendly as possible. Once you have enrolled you are given 60 days to complete the final exam and project. Students who receive a 70% or above on the final exam and successfully complete the model HACCP plan will receive a document of completion and 2.4 Continuing Education Units (CEUs). We allow our busy professional HACCP staff around a week to make a thorough, constructive review of each model HACCP Plan submitted. This course is accredited by the International HACCP Alliance.

A special HACCP team discount is available. Enroll four individuals in the HACCP On Demand course and receive a complimentary fifth enrollment. You cannot receive this special offer online. Call the AIB Registration and Order Department at 800-242-2534 to enroll your team and receive the complimentary enrollment. All five enrollments must be for the same sixty-day time period.

We do not bill companies for enrollments in online courses. You may use a credit card online, call in a credit card or mail payment to AIB.
