A broad overview of ingredients and processes related to the modern wholesale baking industry. The seminar immerses participants in a week where they make and sample a variety of popular baked goods.

Participants spend four afternoons in AIBís well-equipped baking labs where they produce pan and hearth breads, flour tortillas, batter cakes, cinnamon rolls, coffee cakes, cake doughnuts, and yeast-raised doughnuts, using the same ingredients and methods common in bakeries.

The seminar increases awareness of the baking industry for people who provide it service, equipment, and ingredients. Participants develop an appreciation of the bakerís job and problems while learning the industryís vocabulary.

The seminar also serves as a perfect orientation to the science and art of baking.

Who should attend?

People new to baking or taking on new roles in: research and development, quality assurance, non-production employees (such as accounting, sales, or support staff, technical sales/service, engineering).
A good course for people who are employed with ingredient suppliers, equipment manufacturers, and baking companies.

Learning objectives

  • Learn the basic function of ingredients, including their effects and purposes in the baking processes
  • Recognize key pieces of equipment used in baking processes and understand their roles
  • Use key production steps to make breads, cakes, sweet goods, doughnuts, and flour tortillas
  • Evaluate and score products made during the course
  • Express awareness of some challenges facing bakers in the production of their products
