HACCP Assessments

The HACCP Assessments course outlines the components of a HACCP audit and teaches the skills necessary to conduct an internal audit of one's own HACCP program or of a supplier's HACCP program. AIB's HACCP instructors will take students through the various phases of HACCP auditing, including making assessments of the HACCP preliminary tasks and the seven principles as outlined by Codex Alimentarius. Several workshops are provided throughout the course to allow the participants to practice what they are learning. In addition to evaluating a variety of HACCP plans for compliance to Codex Alimentarius requirements, the course will provide several tools for verification and validation of HACCP programs that can be applied within their own organizations. The course will also provide guidance for conducting internal audits of various prerequisite programs to ensure that planned food safety assessments are complete.

Participants are invited to bring their current HACCP manuals to the course for off-line discussion with the instructors at breaks and before and after class.

Learning objectives

  1. Recall HACCP terminology and the 12 Steps of Codex HACCP.
  2. Review and audit prerequisite programs.
  3. Review Hazard Analyses to determine if information is accurate, complete, and in alignment with Codex Alimentarius standards.
  4. Review critical control point determination documentation to determine if appropriate information was used and if appropriate conclusions were made.
  5. Evaluate critical limits to determine if they are based on appropriate scientific references and if the limits will control the identified hazard(s).
  6. Evaluate monitoring, corrective action, and deviation records to determine if compliance to the HACCP Program has been demonstrated.
  7. Review verification documentation to determine if compliance to the HACCP Program has been demonstrated.
  8. Explain HACCP validation and the documentation required to determine if information supports the existing plan or suggests the need for changes.
  9. Audit a HACCP manual to determine if information is in compliance with Codex Alimentarius standards.

Persons responsible for conducting internal audits of their company's HACCP Program or conducting audits of their supplier's HACCP Programs.
